6 to 8 potatoes
2 Tbsp. minced onion
2 Tbsp. butter
Diced Ham of any desired amount
2 Tbsp. flour
1 Quart milk
1/2 tsp. salt
Cracker crumbs or substitute
Peel Potatoes and slice thin. Place a layer of potatoes in a flat baking dish. Sprinkle lightly with flour, add a layer of diced ham. Sprinkle with minced onion. Alternate layers of potatoes and ham until all is used.
Scald milk, add butter, salt and pour over top of potato and ham mixture. Put a ring of crackers around inside of pan. This prevents it from boiling over. Preheat oven to 350 degrees.
Bake for 1 hour or until done and lightly browned on top.
